Amaranth is not the first thing that comes to mind when we think of smoothies. However, we had amaranth in abundance last growing season and wanted to show our students who were not familiar with the vegetable how it could be used.
Inspired by Ms. Jacqueline, who brought the seeds from her father’s garden in Jamaica, we decided to make healthy smoothies to mark World Environment Day in June. Blending fresh apple juice, kiwi fruit, banana and ice with freshly picked amaranth leaves, students created a nourishing and thirst-quenching drink, perfect for the summer weather.
